Kimchi isn’t just good for you—it’s also insanely delicious, and gives wonderful depth and complexity to this one-bowl weeknight meal. To keep this Whole30-friendly, make sure to use your own homemade kimchi (like one of the two versions in my latest cookbook, Ready or Not!)…

…or purchase sugar-free, junk-free kimchi at the store (e.g., Choi’s Kimchi Co. White Napa Cabbage Kimchi, wildbrine Korean Kimchi, etc.).

Then, whip up some Whole30 Kimchi Cauliflower Fried Rice, and I guarantee you’ll want to make this over and over again. (Can’t find compliant kimchi? Make my classic Asian Cauliflower Fried “Rice”!)

Oh, and remember—cauliflower “rice” (a.k.a. riced cauliflower) is totally Whole30 compliant, as long as regular rice isn’t something you’re so addicted to that the thought of giving it up triggers withdrawal shakes. It’s not SWYPO (if you’re a true Whole30 geek, you know what that acronym stands for—but if not, read all about it here). The rule of thumb—straight from the Whole30 site: “If you’re subbing something unhealthy with vegetables or high-quality meat, that’s almost certainly a thumbs-up.”

And the last time I checked, cauliflower’s definitely a VEGETABLE!
